We had to pick up each kid at a diff friends house st s different time... they both had projects to work on... and we had to buy new snow boots for Will so it was a night of errand running... so opted to try a Boca burger. This is a pic of Jeffs plate. I opted for no bun...since I can't have wheat ... this was an easy quick meal... adding sweet potatoes...  all agreed Delish... burgers tasted a bit smokee but a good meal ... Will ate at his friends house. We will catch him next round. Hank opted for seconds....    good to know we have a quick option for fast food...that is not meat  is not fattening and does not cause cancer.lol...  success again!!

Jeff made tacos with TVP last night and we had taco salad today... its Delish!!!

ALCAT Food Sensitivity Test Results are in!

Test results are in!  I had this test taken over the holidays while I was in Phx. Its a blood test.

In my endless search to find out the cause of migraines (I know some of the triggers... but not all..) - I think this test will help me identify foods to avoid!




I will need to avoid these foods for 6 months... (min..) - some I am bummed about.. onions.. garlic?? man we put that in everything we eat.... but i am on a mission to FEEL BETTER...  And well the meat thing - that is a no brainer.. since we are not eating it anyhow...

I have not really been drinking coffee lately anyway... so not too upset up about that one. some of the veggies, i am sad about - i love avocado... and yellow squash... but to get on the road to better health - i am determined to feel better!

And of course I could not do this without such a supportive husband who does 99.9% of the cooking...  :)

What an adventure 2012 will be for us!

Eggplant parmesan Vegan style....  Vegan gourmet mozzarella no cheese cheese. It's fantastic.   Breaded with wheat bread crumbs.  Dairy free. Homemade noodles with wheat flour.  This was so Delish.

Last nights dinner

Here is a picture of last nights dinner. It was delish... it tasted like a sweet and sour chicken dish.. the tofu was really delish and the sauce was to die for! We will def eat this again! Score!!! It was fun working with Jeff in the kitchen assisting with the cooking and learning a new recipe...

going vegan...

We have embarked on a new adventure in 2012.  After careful consideration - we are going Vegan...  in the sense of not eating any meat of any kind... not eating dairy.. nor any eggs.  Our boys will do the same in our house... what they eat when they are away from us is purely their choice - but what we stock in our kitchen and cook for meals will  be Vegan. 

We watched an incredible video/documentary: Forks over Knives: it examines the profound claim that most, if not all, of the degenerative diseases (high cholesterol, diabetes, heart disease, cancer) that afflict us can be controlled, or even reversed, by rejecting animal-based and processed foods.

FYI: (high cholesterol, diabetes, heart disease, cancer) - all if which I HAVE or have HAD in the past... so its worth a change in lifestyle for me right now!

We are excited and have been enjoying researching new recipes - and have been feeling GREAT since eliminating these foods from our diets! The research we have done has really clued us in some myths we really were so misinformed on..  Its amazing what we think are truths.. just because its what our parents told us.. or we learned by watching commercials, etc...
